Cheese and Celery Sandwich

Just a little cheese and celery sandwich filling for you today.  A cheese sandwich lightened up with some celery and yogurt so you can still fill your sandwich generously without going too heavy on the cheese.  I normally make this with my Oatmeal Sandwich Loaf.  Today I’ve photographed it in a sesame bun, just because it’s a little more photogenic that way.  The calorie count in the recipe is for the oatmeal loaf.

  • 2 slices oatmeal sandwich loaf
  • 40 g cheddar cheese grated
  • ½ stick celery finely chopped
  • 1 tbsp flat leaf parsley finely chopped
  • 15 g good quality light mayonnaise
  • 15 g thick Greek yogurt
  • ½ tsp Dijon mustard
  • Small handful wild rocket leaves/gem lettuce
  • 20 g cucumber thinly sliced


  1. Mix together the mayonnaise, yogurt and Dijon mustard

  2. Mix in the cheese, celery & parsley to the mixture and spread on your bread

  3. Add salad leaves of your choice & cucumber
