This chicken breast with chorizo crumb is such an easy and simple dish to prepare it barely merits being described as a recipe! However, I have been asked for the recipe so here it is nonetheless.
I suggest serving this with the aubergine and butter bean stew. I think it looks nicer if you serve it sliced so that you can see the juicy chicken inside.
Chicken with Chorizo Crumb
Chicken breast with a chorizo crumb. A very quick addition to a chicken breast which keeps the meat moist and tender
- 2 chicken breasts, skinless About 300g weight
- 4 cm cooking chorizo ring chopped
- 1/2 slice white sourdough bread (day old)
Preheat a fan oven to 180 degrees C.
Combine the bread and the chorizo in a food processor until it reaches breadcrumb stage.
Place the chicken breast in a shallow ovenproof dish and pile the chorizo crumb on top.
Cook for approximately 25 minutes or until the chicken is cooked through
