This is the brown loaf that we make all the time. It took me ages to develop a recipe that was just what we like for every day and this is it! It’s got a mix of oats, wholewheat and white flours. It rises well and works well for sandwiches & toast. It makes really light & crispy toast which I love.
It’s very much a tried and tested recipe as I use this recipe for the breakfasts in our B&B. In fact, I developed the recipe specifically for this. A quick calculation tells me that I’ve probably baked it over 500 times although I haven’t been counting! In summer, when it’s hot and dry, I probably add about 5 ml extra water and ease back on the yeast very very slightly. All breads are a bit like that though, even bread machine ones as the dough is a live product which is affected by its environment.
Oatmeal Sandwich Loaf
Ingredients
- 1.5 tsp fast action yeast
- 50 g rolled oat flakes
- 250 g whole wheat flour
- 175 g strong white flour
- 1.75 tsp granulated sugar
- 1.25 tsp table salt
- 0.75 tsp vitamin C powder
- 37 g sunflower oil
- 340 g water at skin temperature

Add all the ingredients to your bread machine loaf tin in the order specified by your machine maker. For my Panasonic, this was cooked on programme 6 which is a 3 hour programme on the large loaf setting
