Oatmeal Sandwich Loaf

This is the brown loaf that we make all the time. It took me ages to develop a recipe that was just what we like for every day and this is it! It’s got a mix of oats, wholewheat and white flours. It rises well and works well for sandwiches & toast. It makes really light & crispy toast which I love.

It’s very much a tried and tested recipe as I use this recipe for the breakfasts in our B&B.  In fact, I developed the recipe specifically for this. A quick calculation tells me that I’ve probably baked it over 500 times although I haven’t been counting!  In summer, when it’s hot and dry, I probably add about 5 ml extra water and ease back on the yeast very very slightly.  All breads are a bit like that though, even bread machine ones as the dough is a live product which is affected by its environment.

Ingredients

  • 1.5 tsp fast action yeast
  • 50 g rolled oat flakes
  • 250 g whole wheat flour
  • 175 g strong white flour
  • 1.75 tsp granulated sugar
  • 1.25 tsp table salt
  • 0.75 tsp vitamin C powder
  • 37 g sunflower oil
  • 340 g water at skin temperature

Instructions

  1. Add all the ingredients to your bread machine loaf tin in the order specified by your machine maker. For my Panasonic, this was cooked on programme 6 which is a 3 hour programme on the large loaf setting
