Parsnip, Spinach & Pea Soup
A winter warming soup of parsnip, spinach and pea

Ingredients
- 10 ml olive oil
- 1 medium onion chopped
- 1 clove garlic chopped
- 3 sticks celery chopped
- 500 g parsnips peeled and chopped
- 1 tbsp frozen chopped ginger
- 1/2 tsp turmeric
- 1/2 tsp ground coriander
- 1/2 tsp ground ginger
- 1 litre vegetable stock
- 175 g frozen chopped spinach
- 50 g frozen petits pois
Instructions

Fry the onions in the olive oil over a gentle heat until transparent

Add all the other ingredients, except the spinach and petits pois, and cook until all vegetables are tender

Blend together until smooth

Add the remaining ingredients and cook until they are hot
