This salad with avocado is a bit like avocado toast but in a salad.  Very quick and easy.  Suitable for vegetarians

A salad of avocado and croutons with a yogurt and lime dressing

  • 2 tsp olive oil
  • 2 slices white sourdough bread cubed
  • 1/2 bag prepared salad leaves
  • 100 g white cabbage
  • 1/4 bulb fennel
  • 50 g cucumber
  • 1/2 white onion
  • 1 stick celery
  • 2 baby avocado sliced


  • 4 tbsp Greek yogurt 2% fat
  • 1/2 lime
  • 1/4 tsp mixed herbs
  • salt & pepper to taste


  1. Preheat the oven to about 200 degrees C

  2. Put the olive oil onto a baking tray and quickly toss the bread cubes in and around it so that the bread becomes very lightly covered in the oil

  3. Bake the croutons till they are golden in colour, probably 10-15 minutes

  4. While the croutons are cooking, make up the rest of the salad

Make up the dressing

  1. Squeeze the juice from the lime and mix with the other dressing ingredients

Make up the salad

  1. Shred the onion, cabbage, fennel, celery and cucumber finely using a mandolin( or a sharp knife if you don't have one) and add the salad leaves

  2. Mix together the salad and about half of the dressing and add to the bowls

  3. Add the croutons and the avocado with a blob of the remaining dressing on top of the avocado
